White Wine Onion Soup

Ingredients


1 Large White Onion finely chopped
2 teaspoons of Thyme
1 tablespoons Olive Oil
1 pint Vegetable Stock
1/4 pint White WIne
Salt & Pepper
Sugar

Recipe


Add Olive Oil then the finely chopped onion to a heavy based saucepan and heat on a moderate heat.  Cook for 20 minutes stirring occasionally. 
Once the onions are soft and golden brown add the vegetable stock and thyme to the pan.  Now bring to the boil for 2 minutes. 
Now reduce the heat to a simmer but do not remove the pan from the hob.  Add in the white wine and salt then cover.  Stir occasionally for 30 minutes. 
While cooking check taste and add more wine or salt.  If the soup is beginning to taste bitter add some sugar.  Maybe half a teaspoon.
After the 30 minutes is up serve with garlic bread or just french stick.
This recipe will give you enough for a starter soup for 2.
